Oct 6, 2008 - I do the paper towel method, and have since the second time I made them. I usually boil the cauliflower with a clove of minced garlic per head of cauliflower. It adds real good flavor. I also use cream cheese instead of sour cream. My whole family loves these mashed "fauxtatoes" better than mashed potatoes...my kids beg me to make them all the time!Oh, and yeah, I like lots of butter in them, too. MmmMMM!

Oct 6, 2008 - Have you ever steamed the cauliflower instead of boiling it? I find that steaming it soft makes the cauliflower less wet and soupy. I use a steamer basket. You do not have to use the paper towels as the cauliflower isn't very wet at all. I use a food processor and add the flavoring stuff. I got this idea from Linda Sue.

Oct 6, 2008 - Never steamed it before...mostly because I'm not sure how to do it. Don't have a steamer. Sounds like a great solution to the water issue, although I'm sure you could still dab the water out of it, too.

Oct 7, 2008 - Cool, I'll probably cook this up for dinner in a day. Well, my sister and I started eating low carb in 2003 or so, and she was a major mashed potato fiend. After 8 months, she couldn't take it anymore and needed mashed potatoes. She searched for an alternative to potatoes and found a recipe for turnips. We got two huge turnips and boiled them, mashed them up and... gagged! She got so sick that she gave up on low-carb forever. And there was a funky turnip smell in the kitchen for some time.

Oct 14, 2008 - I've used Cauliflower for potato salad and now thats the only way my husband will eat "potato salad" he loved it, I used frozen cauliflower, bacon, egg,chives,and mayo.....YUMMMMM it goes perfect with BBQ chicken on the grill :o) we dont miss the traditional POTATO at all!!!!!

Nov 11, 2008 - We always microwave steam the cauliflower, it takes a quarter o the time and leaves it not waterlogged. Over time I've actually come to enjoy it with less dairy and more cauliflower flavor but I'm kinda wierd....

Nov 24, 2008 - Cawliflower has been very good to me for my weight-loss. I don't think you can't eat too much. I never thought about smashing it, though. Thanks!

Nov 24, 2008 - I would suggest you keep the water of the cooking because it contains minerals and Vitamin K. One cup of cowliflower provides you with 92% of you Vitamin C daily need! With the cooking and the throwing of the water, I don't know how much of these minerals and vitamins left, though. You could add this water to your soups.
